20 gauge should be enough if you really have 316L. I just built two using 11 plates. I do not know about the size effect – if you need to produce more HHO then you need bigger plates. I know the spacing is very critical. As a rule of thumb, the spacing should be the thickness of one nylon washer or plastic tie. The bigger the spacing is, the higher temperature the cell can get as more electricity is used to heat the water rather than to break up the H-O bonding in the water molecule.
